Made at the Ranch

The Ranch food and beverage team is proud to present Central Oregon farm to table concepts at our restaurants. The farm to table offerings provide locally grown herbs and vegetables, some of which are raised in the garden right next to the Lodge Restaurant, or at organic farms just down the road. The Ranch is proud to select regionally raised meats, such as Central Oregon raised certified Angus beef and Carlton Farms Pork to ensure the highest of quality for our guests.

In June 2011, Chef Dean Ecker released the spice program used in the restaurants at the Ranch. These proprietary spice blends have been developed by BBR Executive Chef Dean Ecker and are the perfect way to impart great flavor into your favorite dish at home.   Six seasonings to choose from including:  Vegetable, Beef, Poultry, Seafood, Coffee Pork Rub and Beer Can Chicken. Sets of 3 / $18   or   6 / $33  or  $6.95 each.

Our culinary team has created three unique smoked salts featuring French fleur de sel.  Add subtle flavors of Alder, Hickory or Apple Wood to grilled meat or seafood without having to fire up the smoker.  Set of 3 / $14 or $5 each

The latest in the line of Made at the Ranch products are jams and jellies, featuring Oregon Marionberry, Mixed Oregon Blackberry, sweet Strawberry jam and a spicy Jalepeno jelly.  Fruits for this line are from Willamette Valley farms with whom the Chef has made arrangements for specified berries.
